Today's kitchen creation is homemade Cashew Milk. I love making my own almond milk, and cashew milk is about 100 times easier! This is super delicious and cashews are full of anti-oxidants, good-for-you fats, high in copper and magnesium and great for healthy hair/nails, anti-cancer fighting properties and surprisingly contain less fats/better fat profile than other nuts!
1 cup raw soaked cashews, rinsed (soak in water for a few hours or overnight in fridge)
3-4 medjool dates (depending on desired sweetness - I also like to soak these too for easy blending)
4 cups water
1 tsp fresh vanilla bean
1 tsp cinnamon
1 tsp nutmeg
1/4 tsp pink himalayan salt or sea salt
Add everything to the blender and blend on high. Nut milk will keep in fridge for 2-3 days (will smell sour and obviously bad if it has expired).
