I love the holidays. Like, a lot. I love the smell of evergreen, I love to cook holiday meals and host friends, and I love holiday spices and getting festive. Although I grew up in St. John, I've spent the last 14 years in the states during Thanksgiving and December until I've come home for the holidays. There is something about being in chilly weather, going to grocery stores that smell of cinnamon and seeing Christmas decorations everywhere you go that really gets you in the holiday spirit. Here in St. John, we have to try a little harder to get in the spirit :). This Pumpkin Spice smoothie did the trick for me!
- 2 tablespoons Be. Satisfy My Soul Vanilla Superfood Blend
- 1 cup roasted pumpkin, cold
- 2 frozen bananas
- 1 1/2 cups almond milk or more to reach desired consistency
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cardamom (or ground clove)
*optional - add a teaspoon of pure Grade B maple syrup if you desire a sweeter smoothie
Put all ingredients in blender, blend, top with cinnamon if you want, ENJOY!
For the pumpkin - I like to purchase local pumpkin (it's inexpensive and so good). Cut the skin off, discard seeds and inards. Cut into 1 inch slices or dice. Wrap in foil and roast in oven at 500 degrees for 30-45 minutes or until soft.
